- ingredients
- 225g flour
- 40g sugar
- pinch of salt or two
- 3 eggs
- 500ml milk
- 50g butter
- instructions
- mix the dry ingredients
- add the eggs and the milk and whisk together
- melt the butter and whisk it in
- fry
Sourdough pancakes
- 1 part sourdough
starter
- 1.25 parts flour
- 1.7 parts buttermilk
- leave to rest overnight
- per 100g of starter
- 1 egg
- 25g melted butter
- pinch of salt
- 15-20g of sugar
- mix everything with the overnight sponge
- add 1/2 (~2.5g) tsp of baking soda per 100g of
starter

Thick and fluffy pancakes
- makes somewhere between 5-6 10-12cm diameter pancakes
- ingredients
- 125g flour
- 20g sugar
- 1tsp baking powder
- 1/3tsp baking soda
- pinch of salt
- 170ml buttermilk
- 20g butter
- 1 egg
- mix the dry and the wet ingredients separately
- fold the dry ingredients into the wet, disturbing them as little as
possible
