Flaky Dough
- ingredients
- 200g wheat flour (T55/T550/Type 0) + some extra for rolling
- 12g sugar
- tsp or about 4g salt
- 140g butter
- half cut into small cubes
- half thinly sliced
- ~75g ice-cold water
- instructions
- mix the flour, sugar, salt, and cubed butter in a large bowl
- work the mixture between your fingers until the butter has broken almost down
- add the thin slices of butter, work them the same way, but leave them as larger pieces
- add about 60g of the cold water to the mixture and work it in with a fork
- gently knead the dough with your hand
- remove larger pieces of dough from the bowl to a work surface
- if there is still some dry flour and butter add another splash of water to it
- press the dough together wrap in something or place in a container with a lid and up in the fridge for about 2 hours
- take the dough from the fridge
- flour the surface and roll out the dough
- fold the dough in thirds (a letter fold), fold over the center third then the remaining half over all that
- cover the dough and place in the fridge until a recipe asks for it
